Chocolate Truffle Cake
Simply divine Uwe from highfoodality has probably the recipe for the best chocolate truffle cake on his blog . I have revised it with little modifications. My supperclub guests were thrilled.
Prepare a short pastry layer 300 g flour 200 g soft butter 80 g icing sugar
1 pinch of salt
Bake it in the oven for about 40 minutes. Put it aside until it's cold.
Prepare the truffle layer 250 g dark chocolate 250 g cream 40 g butter 1 egg yolk ½ Tea spoon cinnamon ¼ Teaspoon of aniseed ½ Teaspoon Printen spice 1 pinch of salt 1 teaspoon vanilla 3 tablespoons Cointreau
Warm-up the cream, add chocolate until it has melted (do not boil!!!) . Add all spices, a little pinch of salt and Cointreau. Then add the butter and finally carefully fold in the fluffy beaten egg yolk. Spread it in a mould or, as I did in this recipe, on a layer of shortcrust pastry. Put the mould in the fridge for about 7 hours. Decorate and ....
