Creamy Zucchini Soup
Light and creamy zucchini soup that is perfect as a starter to your dinner on a hot summer day.
What better way to use a giant home grown zucchini than for a nice soup? Exactly! We used the zucchini as a light starter for dinner.
Ingredients: - 1 large zucchini - 2 onions
- 2 garlic cloves
- 200 ml cream - Nutmeg - Vegetable broth - Butter
Melt the butter, fry the garlic and onions in the butter, peel and chop the zucchini. Add the zucchini to the onions and sauté, then add the water and vegetable stock and simmer until the zucchini is tender. Pour the water into a container so that you can use the broth later. Puree the rest, add the cream and season with nutmeg and possibly salt and pepper.
