In summer it is very pleasant to enjoy a fresh sorbet in between the starter and the main course.
This time I've got my inspiration from "Sweet" a fantastic cookbook for sweets you love ..... and believe me Campari Grapefruit Sorbet with its sweet bitter note makes you crave more.
Here we go:
500 ml rose fresh grapefruit juice
50 ml lime juice
100 ml fresh red orange juice
90 ml Campari
170 g icing sugar
Blend the fruits in a blender (without any pip) heat it softly until the sugar is dissolved, remain it from heat, when it is cold ad the Campari and freeze it for a minimum of 8 hours. If you don't have an ice machine you can break up the formation of the ice crystals during the freezing process by remaining the sorbet every hour.
Serve in glass and cover with a small portion of Campari
